Thanks for visiting my page! I’m Melissa and I’ve been baking since I was two years old. I spent years baking for fun, developing my skills, and learning new techniques before finally launching Piece of Cake Bakery, LLC in November 2023.

I find baking to be an incredibly fulfilling, creative endeavor. Many of my recipes have been carefully developed over the years, and I enjoy learning new techniques to enhance flavor and add subtle nuance. One my best tricks is using brown butter in a lot of my cookies and cakes: it add so much nutty flavor! I developed a new way of making my signature frosting Swiss Meringue buttercream to speed up production. Some of my hints and tips I share on my Facebook, Instagram, and YouTube pages.

I’m originally from Omaha, NE and moved to Springfield with my husband in October 2021. We have a spoiled Basset Hound named Charlie. I have had a variety of hobbies and interests throughout my life: I’ve traveled to ten countries, earned a black belt in Japanese sword fighting, written two historical fiction novels, and been part of the steampunk community. Mermaid swimming is now my main hobby along with baking and I hope in the next year or two to get my PADI certification.
